Summer Peach Chicken Salad

Summer Peach Chicken Salad is yet another easy lunch recipe where you can indulge in the flavorful peaches that are so delicious this time of year.  But if peaches or any other stone fruit aren’t in season, try it with apples or pears instead.  Those of you that have a garden in your backyard (I’m jealous of you if you do), you can utilize fresh spring greens like arugula and spinach and also fresh herbs like basil and mint for this recipe.  I grow herbs in my kitchen window sill and loved smelling the basil and mint aroma as I chiffonaded them up for this recipe.  To make this recipe easy and quick, I buy the chicken already grilled, so all I need to do is chop up all the ingredients and portion them out into my meal prep containers.  If you have the time and decide to grill your own chicken for this recipe, I suggest grilling the peaches too which will crystallize the natural sugars in the fruit and give this salad more robust flavor.  Yummm!

Summer Peach Chicken Salad Recipe

Ingredients

Salad Ingredients:

  • 4 ripe peaches
  • fresh basil, about 4-5 leaves per serving chiffonade (stack and then roll your leaves into a “basil cigar” and slice them up, this should give you long thin ribbons)
  • 4 mint leaves cut into slivers
  • small red onion
  • 4 cups arugula
  • 4 cups baby spinach
  • 16oz (1lb) grilled boneless skinless chicken breast chopped up or shredded

Dressing Ingredients:

  • 4 tsp of olive oil (1 tsp per serving)
  • 4 Tbsp lemon juice (1 Tbsp per serving)
  • 2 Tbsp (1 1/2 tsp per serving) white wine vinegar or apple cider vinegar
  • 2 Tbsp of agave (1 1/2 tsp per serving)

Instructions

  1. Toss the salad ingredients and divide evenly into 4 sealable to go containers.  Seal shut and refridgerate until ready to eat.
  2. Mix the dressing ingredients and divide into 4 smaller sealable to go containers.  Seal shut and refridgerate until ready to eat.
  3. Drizzle dressing over salad when ready to enjoy.

I discovered this recipe in Bob Harper’s “Skinny Meals” cook book.  Each serving contains 249 calories, 25g of protein, 24g of carbs, 8g of fat, and 4g of fiber.
