Sweet and Spicy Roast Beef Wrap

Sweet and Spicy Roast Beef Wrap

  • 1/4 Gala Apple cut into matchsticks
  • 1/2 carrot shredded (or use a handful of already shredded carrots, I get mine from Trader Joe’s)
  • 1/2 scallion thinly sliced
  • 1 Tbsp fat free mayonnaise
  • 1 tsp lime juice
  • 1/8 tsp salt
  • 1/8 tsp ground Chipotle Chile pepper
  • 1 (8 inch) fat free whole wheat flour tortilla
  • 3oz thinly sliced lean sirloin roast beef
  • 3 thin slices of avocado (if making for 4 servings just slice the whole avocado)
  • 1/4 cup lightly packed baby arugula

Combine apple, carrot, scallion, mayonnaise, lime juice, salt, and ground chipotle in a bowl, mix well.  If making for 4 servings, multiply measurements for above ingredients by 4, and mix in large bowl.

Layer tortilla with roast beef.  Arrange avocado slices in line across roast beef and top with apple mixture and arugula.  Gently roll up tortilla and wrap securely in plastic wrap to keep roll tight.  Refrigerate at least 15 minutes or up to several hours.  (Psst while the wraps are in the fridge, this is a good time to knock out your breakfast meal prep 😉)

Remove plastic wrap from tortilla.  Cut tortilla into 6 slices with serrated knife to make spirals and arrange on plate cut side up.


This is another recipe I found in weight watchers Fresh and Easy cookbook.  It is great for when you’re on the go.  The 6 slices make great bite size pieces to pop in your mouth while your driving to work, kids events, or meetings.

The above recipe serves 1, but as usual I purchase enough ingredients to make it for 4 servings.  One wrap contains 374 calories, 11 grams of total fat, 3 grams of saturated fat, 752 mg of sodium, 38 grams of carbohydrates, 10 grams of sugar, 6 grams of fiber, and 31 grams of protein.  Enjoy!
