Quinoa Summer Oatmeal is a recipe I love for so many reasons! First of all it is super easy to make. Just mix all the ingredients in a bowl, pour into a baking dish, bake and breakfast is served! Another reason why this recipe rocks is that it has some amazing ingredients. Strawberries and raspberries are in season and are delicious this time of year. Both of these summer berries are a great source of vitamin C and antioxidants. This recipe also contains quinoa (keen-wah), which is a high fiber and protein packed super food. Quinoa Summer Oatmeal Recipe
- 16 egg whites
- 4 tsp olive oil
- 1 cup unsweetened vanilla almond milk
- 4 tsp agave
- 2 cups cooked quinoa
- 1 cup raspberries
- 1 cup strawberries, quartered with tops removed
- Olive oil spray
- Preheat oven to 375 F.
- Beat the egg whites, olive oil, almond milk, and agave.
- Fold in the quinoa and berries.
- Lightly coat a casserole dish with olive oil spray. Pour in the quinoa-berry mixture.
- Bake for 20-30 minutes until the liquids have been absorbed.
- Once it has cooled, cut it into quarters and divide the quarters amongst 4 sealable to-go containers, and keep refrigerated until ready to eat.
- When ready to eat, unseal a portion of the lid and microwave for 3 minutes.
This recipe in inspired from Bob Harper’s “Skinny Meals”, it makes 4 servings and each serving contains 327 calories, 21g of protein, 44g of carbs, 8g of fat, and 6g of fiber. This recipe is also a great vegetarian option.

There are two different prices listed for Target’s quinoa. This is because Target offers “Simple Balanced” pre-cooked quinoa, which I always get because it’s so quick, convenient and tasty. Before doing step 2 of the recipe, rip the top off of the pre-cooked quinoa bag and microwave according to the package instructions (you’ll need two pre-cooked quinoa packages for this recipe if you decide to go this route).
