Peach Mango Smoothie is quick, easy and clean deliciousness.  Summer is coming to an end, so as the grocery stores are in transition with their seasonal produce, I wanted to share a few more of my favorite summer recipes.

Peach Mango Smoothie Recipe

Ingredients

  • 2 cups of water (1/2 cup per serving)
  • 2 cups of ice (1/2 cup per serving)
  • 8 scoops of protein powder (2 scoops per serving.  I used (Arbonne Vanilla Protein Powder*)
  • 2 cups of frozen peaches (1/2 cup per serving)
  • 1 cup of frozen mango (1/4 cup per serving)
  • 1/2 tsp of salt (1/8 tsp per serving)
  • 8 packets of Monk Fruit in the Raw (2 packets per serving.  See below in my notes section for more info on Monk Fruit.)

Instructions

  1. Combine a single serving of water, ice, protein powder, peaches, mango, salt, and monk fruit in four different blender cups (I use Nutribullet, love it and have been using it for a few years.  It’s easy to use and the cups and blade are dishwasher friendly)
  2. Purée each cup until smooth for about 45 seconds.  Seal and refridgerate until ready to enjoy.
  3. Shake well before drinking.

I discovered this recipe in Rocco Dispirito’s “Rocco’s Healthy+Delicious” cookbook.  This recipe serves 4 and each serving contains 181 calories, 0g of fat, 21g of protein, 17g of carbohydrates, and 10g of fiber.

*I want to take a moment to share some info regarding protein powder.  Most protein powders contain either soy or whey.  Both of which are not good for you.  Soy contains estrogen which your body doesn’t need regardless of whether you’re male or female.  Whey protein is highly processed, and contains dairy, which can cause negative effects to many people.  Ever since I did a 30 day Arbonne cleanse, I now swear by their products.  Arbonne protein powder contains 20g of plant based protein (pea protein, cranberry protein, and brown rice protein) in every serving.  This helps support your muscles by delivering essential amino acids and more than 20 vitamins and minerals.  It also has been clinically tested and certified to have a low glycemic index, so all you diabetics out there this protein powder is your jam!

Whole Foods was the only grocery store that offered all the ingredients needed.  If Whole Foods isn’t an option for you, I also provided links you can use to order the harder to find ingredients.  However, monk fruit can be substituted for stevia or any other non-calorie sweetener.  I prefer using monk-fruit or stevia because it is natural and easier for your body to digest.  Monk fruit is the sweeter of the two sweeteners.

Peach Raspberry Overnight Oats

Peach raspberry overnight oats is another easy quick breakfast recipe that showcases my favorite (I’m sure you’ve guessed by now) summer produce items peaches and raspberries.  Peaches and raspberries not only are delicious this time of year, they’re so good for you too.  Check out the beginning of my blog post Peachy Keen Protein Smoothie for some quick health info on peaches, they’re a pretty amazing fruit.  Old fashioned oats, or rolled oats also have some pretty amazing benefits too.  Old fashioned oats are a whole grain ingredient, and according to www.healthyeating.sfgate.com whole grains reduce your risk of diabetes and heart disease.  Oats are fiber rich (adults should consume 20-35 grams of fiber per day) with soluble and insoluble fiber.  This improves metabolism which helps prevent obesity.

Not only does peach raspberry overnight oats have superstar ingredients it is also quick and easy to prepare.  I know I’ve stated this in my previous blog posts, but I don’t like spending my free time from work meal prepping.  Recipes that are quick and easy to prepare and delicious and uncomplicated to eat is what makes my life “smart and scrumptious”.  My easiest go to recipes for breakfast are usually protein shakes/smoothies and overnight oat bowls.  Overnight oat bowls only require you to combine the ingredients in a bowl and refridgerate overnight.  Then in the morning just grab a spoon and your oat bowl before you head out the door to attack your day!  Simple, easy and delicious!

Peach Raspberry Overnight Oats Recipe

Ingredients

  • 2 cups unsweetened vanilla almond milk (1/2 cup per serving)
  • 1 cup of plain fat-free Greek yogurt (1/4 cup per serving)
  • 4 packets of Stevia (1 packet per serving)
  • 1 tsp vanilla extract (1/4 tsp per serving)
  • 1 tsp ground cinnamon (1/4 tsp per serving)
  • 1/2 tsp ground nutmeg (1/8 tsp or a dash per serving)
  • dash of salt per serving
  • 2 cups of old-fashioned oats (1/2 cup per serving)
  • 1 peach (1/4 cup chopped per serving, use thawed frozen if peaches aren’t in season)
  • 1 cup of raspberries (1/4 cup per serving, use thawed frozen if raspberries aren’t in season)
  • 1 oz toasted sliced almonds (1 Tbsp per serving)

Instructions

  1. In each of your 4 sealable meal prep containers, thoroughly mix one serving’s worth of almond milk, yogurt, stevia, vanilla extract, cinnamon, nutmeg, and salt.
  2. Stir in one serving’s worth of oats and peaches into each of your 4 sealable meal prep containers.
  3. Cover each container, and refridgerate for at least 6 hours, until oats are soft and have absorbed most of the liquid.
  4. Top with raspberries and sliced almonds before eating.

I found this recipe in the 2018 spring issue of Hungry Girl magazine.  It’s a vegetarian and gluten free recipe that serves 4.  Each serving contains 284 calories, 8g of total fat, 1g of saturated fat, 268mg of sodium, 40.5 g of carbs, 8g of fiber, 8.5g of sugars, and 14g of protein.

Peachy Keen Protein Smoothie

Peachy Keen Protein Smoothie is a great summer smoothie option because peaches are so delicious this time of year!  Feel free to substitute nectarines or any other stone fruit for the peaches in this recipe if you prefer.  Not only are peaches delicious, but they have so many health benefits.  I should probably do a separate blog post just on peaches because they are so beneficial, but here is a quick overview.  Just like strawberries and raspberries in my previous post, peaches are another great source of antioxidants and vitamin C.  According to www.medicalnewstoday.com, stone fruits like peaches contain bioactive and phenolic compounds that have anti-obesity and anti-inflammatory properties.  This reduces bad cholesterol associated with cardiovascular disease, and wards off diabetes.

So if the above paragraph was super boring but you love peaches just trust me and try this recipe and maybe buy a few extra peaches too for a snack between meals.  Your body will thank you!

Peachy Keen Protein Smoothie

Ingredients

  • 2 peaches (or more for snacking) chopped (half a peach per smoothie)
  • 1 1/3 cups of frozen mixed berries (1/3 cup per smoothie)
  • 1 1/3 cups of plain non-fat Greek yogurt (1/3 cup per smoothie)
  • 4 Persian cucumbers diced (1 per smoothie)
  • 1/2 cup of ground flaxseed (2 Tbsp per smoothie)
  • 8 scoops of vanilla protein powder (*Arbonne Vanilla Protein Powder) (2 scoops per smoothie)
  • 8 packets of Stevia or 8 tsp of agave
    • *optional (this is if you like your smoothies a little sweeter like the peach shakes at Chik-fil-A)
    • (2 packets or 2 tsp per smoothie)
  • A few Tbsp of water *optional (this all depends on how thick you like your smoothies)

Instructions

  1. Divide the ingredients up equally amongst 4 different blender cups, and blend each until smooth.
  2. Seal and refridgerate until ready to eat.
